Avocado Alfredo
This creamy avocado alfredo sauce that can be served on noodles or as I chose here….zoodles. I purchased my OXO Spiralizer several months ago and I can’t say enough good things about this non-motorized gadget that cost me $15 at Sur La Table. The best part is that it takes up virtually no space in my cupboards because of its compact design.
  • 1 shallot clove, minced
  • 2 garlic cloves, minced
  • 1 whole avocado
  • 2tbsp parmesan cheese, grated
  • 2tbsp heavy cream
  • 1tbsp olive oil
  • salt and pepper
  1. You’ll need a food processor to make this recipe, I just happen to have a handy mini food processor that worked out perfect.
  2. In a small saute pan heat the olive oil over medium heat and add the minced garlic and shallot. Stir frequently and cook until tender.
  3. Cut the avocado in half and remove the seed. Scoop the avocado into the food processor. Add the olive oil, shallot, garlic mixture. parmesan cheese and cream. Turn on the food processor and blend until smooth; about 1 minute. Salt and pepper to taste.
  4. Toss the avocado mixture with hot grilled zucchini (zoodles) noodles or serve on linguine noodles if you’re in the mood for full-on carbohydrates.
Recipe Notes

Sometimes you just have to use your noodle when you’re trying to use up food in the frig so it doesn’t go to waste.  This is one recipe I will definitely make again with intention.  As you see here I served my dish with grilled shrimp; raw shrimp sprayed with olive oil and sprinkled with Old Bay seasoning.
