Creamy Tarragon Chicken

You don’t have to be a foodie to worship French food, you just have to enjoy one bite and you’ll be as hooked as I am.  Tonight’s meal was so delicious it had me fantasizing I was in Provence being served by my deliciously handsome French lover as he spent an hour in the kitchen preparing a perfect chicken breast slathered with a creamy, fresh tarragon sauce.  He’s the kind of guy you’ve heard about.  Irresistible as hell.  All served at a well-decorated table and eaten with three hours of delightful conversation, washed down with a carefully selected bottle of wine.  Ba ha ha ha…wasn’t that a wonderful fantasy???  Now for the recipe…

Ingredients
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 chicken breasts skinless, boneless
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 4 tsp fresh tarragon chopped
  • salt and black pepper to taste

Instructions
  1. Melt the butter and heat the oil in a skillet over medium-high heat. Season chicken with salt and pepper and place in the skillet. Brown on both sides. Reduce heat to medium, cover and continue cooking 15 minutes or until chicken juices run clear. Remove chicken, set aside and keep warm.
  2. Stir cream into the pan, scraping up brown bits. Mix in mustard and tarragon. Cook ans stir 5 minutes or until thickened. Return chicken to the skillet to coat with sauce.
  3. Serve over wild rice or as I did, roasted zucchini noodles (zoodles).
