I have to warn you, this is not your mama’s chicken soup!  I was inspired to create this recipe after spending a week in southern California where I ate Mexican food, two meals a day for a week.  Oh please, please hook me up to a salsa IV!  Once I returned back home I decided to recreate the flavors I was yearning; cumin seasoned chicken, avocado and a little heat.  I avoided the beans and rice all week so decided to keep this recipe along the lines of my Paleo beliefs and mindful of the New Year’s resolution to lose 10 pounds….I’m down 8 pounds.  How’s your healthy New Year’s resolution coming along?  Sorry to throw jalapeños in an open wound!

Ingredients
  • 1.5-2 lbs cooked chicken use chicken breasts only if you prefer
  • 1 tbsp olive oil
  • 1 large onion coarsely chopped
  • 1 any color bell pepper seeded and chopped, I used yellow
  • 1-2 jalapenos seeded and diced
  • 4 cloves garlic minced
  • 4 large carrots peeled and sliced
  • 3 stalks celery chopped
  • 1 large Anaheim pepper chopped, for extra heat use a poblano pepper
  • 2 teas salt
  • 1 tbsp ground cumin
  • 1/4 cup cilantro chopped
  • 5 cups chicken stock
  • 2- 7 ounce cans green chiles
  • 3 tbsp Coconut cream
  • avocado and cilantro to garnish

Instructions
  1. Heat the olive oil in a large cast iron oven or saucepan. Add the veggies and saute for 10 minutes until the veggies are tender crisp. Add the salt and spices and saute another 5 minutes.
  2. Add the chicken stock, chicken and green chiles and bring to a boil. Stir in the coconut milk until blended into the stock.
  3. Lower the heat and simmer for 20 minutes, leaving uncovered to reduce the stock.
  4. Serve topped with fresh chopped cilantro and avocado.
  5. If you like a thicker soup you could add additional coconut cream or whisk in some arrowroot to thicken the broth.

So back to healthy...for variety, you could add additional vegetables such as zucchini or a diced sweet potato.

This Paleo friendly recipe is packed with bold flavor, yet keeping you on the straight and narrow where your New Year's resolution is concerned.
